Zucchini Hummus Wrap

  • Swapped in spinach instead of kale

  • Used Boars Head jalapeno cheddar instead of white cheddar

Ingredients

1 #zucchini, ends removed and sliced

S&P, to taste

1 tablespoon olive oil

1 #tomato, sliced or handful of cherry #tomatoes

1/8 cup sliced red onion

1 cup baby #spinach

Boars Head jalapeno cheddar to taste

2 large tortillas

4 tbsp hummus


Instructions

Heat a skillet on medium heat.


Remove the ends from the zucchini and slice length wise into strips. Toss sliced zucchini in olive oil and sprinkle with salt and pepper.


Place sliced zucchini directly on the skillet and let cook for 3 minutes, turn and cook for 2 more minutes. Set zucchini aside.


While the zucchini cooks, prep the tortillas in the microwave.


Now put it together: by divvying up ingredients between each wrap. Wrap tights and enjoy immediately!
