Tahini Mint Kale Topping

Ingredients

Tahini Mint Dressing

6 tablespoons tahini

¾ cup water

2 garlic cloves, roughly chopped

3 tbsp lemon juice

3 tsp agave

¾ tsp salt

Pepper, to taste

½ cup mint leaves

½ cup parsley leaves


Salad

1 batch tahini mint dressing

2-3 handfuls of #kale and/or #spinach, finely chopped

3 tbsp #raisins

1/2 can #chickpeas, drained and rinsed (I skipped since I served over waffled falafel which is packed with chickpeas)

1 cup cherry #tomatoes, halved


Instructions

Blend all the dressing ingredients together then mix with all the salad ingredients. I ended up using only about 2/3 of the dressing on mine. Maybe if I had more kale or had used the chickpeas I would have needed all of it?
