Slow-cooked Carrot Lentil Casserole



Great option for quarantine cooking. Lentils and onions keep for crazy long.


Serves: 6 | Time: 4-5 hours


Ingredients

1 large onion, chopped

1 cup #carrots, finely chopped

3/4 cup dry brown #lentils

3/4 cup jasmine rice, uncooked

3/4 cup shredded vegan cheese

1 4-oz can diced chilis

1 4-oz can #mushrooms

1/2 tsp thyme

1/2 tsp basil

1/2 tsp oregano

1/4 tsp salt

1/4 tsp garlic powder

1 14-oz can diced #tomatoes

1 cup veggie broth (homemade to reduce sodium)


Instructions

Combine all the ingredients in a slowcooker. Cook on high for 4-5 hours.
