See what I did there? It's fake carnitas, so it's Car-NOT-as. Get it?

Inspiration: Curly's | Serves: 6-8 | Time: 50 min (with cheese recipe)
Ingredients
1 batch sweet potato nacho cheese (takes about 25 minutes)
1 package Barvecue Plant-Based Carnitas
4 cups cooked rice (either white or brown rice will do)
10 oz diced #tomatoes and green chilies
1 16oz can black beans
Instructions
Preheat oven to 350˚F.
Add the rice to your casserole dish, then layer black beans, the tomatoes/green chiles, and half of the nacho cheese.
Layer the "carnitas" on and drizzle the rest of the nacho cheese on top
Bake at 350˚F for about 20 minutes.
Serve and enjoy!
