Sweet Potato Noodles with Almond Butter Sauce

Ingredients


Sweet Potato Pasta 2 sweet #potatoes, spiralized (should have done 1 more small tater)

EVO for sauteing 1 cup #kale, chopped 1 cup diced cherry #tomatoes

.5 cup basil, chopped


Creamy garlic almond butter sauce 1.5 cup homemade veggie broth .5 cup almond butter 1 tbsp vegan worcestershire sauce 1.5 tsp garlic powder


Other

Oregano for seasoning


Instructions

In a large sauté pan, heat olive oil over medium heat and add in sweet potato noodles.  Toss frequently while making your almond butter sauce. 


In a small soup pot, combine all ingredients for the almond butter sauce.  Heat until veggie broth is simmering and stir until a creamy sauce forms. 


Pour creamy sauce over cooking sweet potato pasta. Stir in kale, tomatoes and basil. 


Bring mixture to a simmer and cover with a lid.  Cook until sweet potatoes noodles are soft, about 10 more minutes of cooking. 


Plate sprinkle with oregano

Exercise

~3 miles of walking, but very sloth like today. It's HOT in freaking September! It's hard to be motivated...
