Spicy Strawberry Gazpacho

Slightly Modified a Golubka Kitchen Gazpacho Recipe | Serves: ? | Time: ~10 min + chill time


10 ripe sweet #strawberries, divided 3 large heirloom #tomatoes, roughly chopped 1 small #RedBellPepper, seeded and roughly chopped 1 medium #zucchini, peeled and roughly chopped 1/3 cup soft sun-dried tomatoes juice of 1/2 lemon 1-2 garlic cloves, roughly chopped 1/4 teaspoon red pepper flakes Dash of cayenne pepper 1/2 teaspoon sea salt large handful fresh basil leaves, plus more for garnish

According to Dr. Axe basil is a proven anti-inflammatory, antioxidant, cancer-fighter, pain-reducer, fever-reducer, diabetes-preventer, liver-protector, blood vessel-protector, anti-stress solution, and immune-booster. All of which can promote kidney health.


Reserve 5 strawberries. Place the rest of the ingredients into a blender and puree until smooth. Taste for salt and spice, adjusting if needed. Chill very well. Slice the reserved strawberries. Ladle the soup into chilled bowls and garnish with strawberry slices and basil leaves. Enjoy.

Vegan Lemon Basil Yogurt and Strawberry Slices on Toast by Me!


1/4 cup plain almond milk yogurt

1/2 tbsp lemon juice

1 tsp dried basil

3 strawberries, sliced thin

2 pieces of toast


Mix the yogurt, lemon juice and dried basil together. Spread on toast. Top with strawberries.
