One Skillet Baked Gnocchi (GF)

Ingredients
1 tbsp EVO
1 pound Beyond Meat Italian sausages
1 small yellow onion, diced
1 carrot, peeled and diced
1 celery stalk, diced
4 cloves garlic, finely minced
24oz marinara sauce
5 oz baby #spinach, chopped
1 pound potato gnocchi
1/4 cup chopped basil, plus more for serving
8 oz mozzarella cheese, sliced
Fresh basil, for serving
Instructions
Preheat oven to 400 degrees.
Heat a large oven proof skillet over medium high heat. Once hot, add the olive oil and then add the ground chicken sausage.
Cook the sausage until browned and slightly crisped, breaking it up as it cooks. Once the sausage has browned, add the diced onion, carrot, and celery and cook for 4-5 minutes until the veggies start to become tender.
Next, add the minced garlic and sauté for 1-2 more minutes.
Lower the heat to medium and add the marinara sauce, stirring until well combined.
Next, add the spinach, gnocchi, and chopped basil, and stir until combined.
Top the gnocchi evenly with sliced mozzarella and then transfer the skillet to the oven.
Bake the gnocchi for 20 minutes until the cheese is melted and the dish is bubbly.
Finish by broiling the skillet for 1-2 minutes until the cheese is lightly browned and golden, watching careful to make sure it doesn’t burn.
Remove the skillet from the oven and top with more chopped fresh basil and parsley before serving. Enjoy!
