Stole from a few old recipes to come up with something completely out there.
Makes: 4 naan pizzas | Time: ~40 min
Ingredients
Carrot Bacon
2 #carrots, cut into think ribbons using a mandolin or peeler
1 tsp coconut aminos
1 tsp agave syrup
1 tsp garlic infused EVO
1 tsp turmeric
1 tsp cumin
1/2 tsp kosher salt, to taste
Cashew Cheese
3/4 cup raw #cashews soaked in hot water for 10 minutes
1 small garlic clove
1 tbsp curry powder
1 tsp ginger powder
1/2 tsp cumin
1/2 tsp coriander powder
1/2 tsp cinnamon
1/2 tsp turmeric
1/2 tsp cardamom
1/4 tsp ground cloves
1/4 tsp ground fennel
Dash of salt
1/4 - 1/2 cup water
The Rest of the Pizza
4 pieces of naan
1/2 cup cooked #peas
1/4 cup red onion, chopped
Fresh cilantro, to serve
Red pepper flakes, to serve
Instructions
Preheat the oven to 425°F and line a large baking tray with parchment paper or silpat. Place the sliced carrot in a small mixing bowl. Adding remain carrot bacon ingredients and allow to marinate while the oven continues to preheat. Bake in the preheated oven for 15 minutes or longer. Keep a careful watch to make sure they don't burn.
Remove carrot bacon from oven, and set aside. Increase the heat on the oven to 425F.
Put the naan onto a baking sheet. Spray the tops with a little bit of cooking spray. Slather on the cashew cheese. Add the carrot bacon, peas, and red onion on top. Pop the naan into the oven for about 8-10 minutes (according to the level of crispiness you like).
Remove from oven. Sprinkle some cilantro on top. Dig in!
