Was getting worried about making sure we use some perishables before they, well, perish. Today's salad makes great use of the excess kale and the very ripe avocado we have on hand.
Serves: 2 as a main, 4 as a side| Time: 7 min
3 cups shredded #kale
2 tbsp lemon juice
1 #avocado, peeled, pitted and chopped
1/2-3/4 cup cherry #tomatoes, halved or quartered
2 tbsp pinenuts
2 tbsp EVO
S&P, to taste
In a medium-large bowl, toss the kale with the lemon juice. Let sit for 5 minutes. Then add the remaining ingredients and toss well again. Enjoy!
