Garam Masala Carrot Curry with Mushrooms & Chickpeas

First vegan recipe of 2021! It's also my first time using By Anyushka. Not sure where I even came across the blog, but sure glad I did.


Garam Masala Carrot Curry with Mushrooms & Chickpeas

Changes: metric to U.S. measurement conversion can be a little rough, so amounts are not exact; replaced maple syrup with agave nectar


Ingredients


Garam Masala Curry

1 onion, chopped

2 cloves of garlic, chopped

1 inch piece of ginger, minced

2 tbsp EVO

~3 cups #carrots, peeled and chopped

1/2 tbsp red curry paste or more to taste

2 tbsp tomato paste

1 15-oz can coconut milk

1 cup vegetable broth (homemade to reduce sodium)

1 cup pureed tomatoes

1 tsp Garam Masala spice mix (I used Penzeys)

2 tbsp agave nectar


Chickpeas

1 15 oz can #chickpeas, rinsed and drained

1 tbsp oil

1/2 tsp curry powder

S&P


Mushrooms

8 oz #mushrooms, sliced

1 tbsp EVO

Salt and pepper, to taste


To serve

Cauliflower rice

Pumpkin seeds


Instructions


Garam Masala Curry

Heat the oil in a large saucepan. Sauté the onion, garlic and ginger until the onion is translucent. Add the carrots and cook for 5 minutes. Add curry paste and tomato paste, stir well and fry for another 3-4 minutes.


Deglaze with vegetable broth, coconut milk and tomato puree, season with spices and agave nectar and simmer for 30 minutes over medium heat.


Then mix the curry in a mixer or carefully with a hand blender until it is creamy. Season again to taste.


While the curry is simmering....


Chickpeas

Preheat the oven to 400F line a baking sheet with baking paper or a silpat. Put the drained chickpeas together with the oil and spices in a bowl and mix. Then distribute on the baking sheet and bake in the oven for about 20-30 minutes until crispy. Open the oven door in between and turn the chickpeas.


While the chickpeas are baking...


Mushrooms

Heat oil in a pan. Fry the mushrooms in it for 5-8 minutes and season.


Bring it together

Serve the Garam Masala Curry with rice, mushrooms and chickpeas and top with pumpkin seeds to taste.
