Curried Avocado Egg Salad

Yep, I'm still in love with eggs. 100% vegan life remains out of reach. I can try to make excuses, but I won't. Eggs are delicious.

Curried Avocado Egg Salad

Recipe by Eating Bird Food | Serves: 3-4 | Time: ~30 min including time to hard boil eggs


4 hard boiled eggs, chopped

1 semi-ripe small #avocado, peeled, pitted and cubed

1/2 tbsp dijon mustard

2 tsp relish or chopped pickles

2 tsp green onions, chopped

1 tsp apple cider vinegar

3/4–1 tsp curry powder

S&P, to taste

Optional add-ins: fresh dill, chopped #celery, #raisins (I did all three)

Toast, to serve

Leafy greens, to serve

Sliced red onion, to serve.


Add all of the ingredients, except for the toast, greens, and red onion, to a bowl and mix until well combined. Spread over toast, top with greens and red onion, and enjoy.
