Chilled Avocado Soup with Salsa

Chilled Avocado Soup by MyRecipes | Serves: 6 | Time: 10 min + chill time


Ingredients

3 #avocados, cut into chunks

3 cups vegetable broth

3 tbsp lime juice

1/3 cup fresh cilantro leaves

1 tsp ground cumin

1 tsp salt

1/4 tsp cayenne pepper


Instructions

Combine ingredients in a blender, and process until smooth. Cover and refrigerate 2 hours or until completely chilled. Pour soup into serving bowls.

2 medium #tomatoes chopped

1/2 red onion, chopped

2 jalepeños deseeded + finely chopped

1 orange bell pepper, chopped

1 small #zucchini, chopped

1/2 cup cilantro

Instructions

Chop and combine.
