Black Bean Waffle Omelette (DF, GF)

I had the hubby make this, and there was a LOT of complaining about how messy this was. So, I guess it needs a lot of editing. Appreciate any advice!

Changes: added bell pepper, used plant milk, used vegan cheese, skipped sour cream topping, used avocado creama instead of chopping it up, and replace taco sauce with salsa.
Ingredients
1 can black #beans, rinsed and drained
1 bell pepper, chopped
5 eggs
3 tbsp plant milk
1/3 cup vegan cheddar cheese
Avocado crema to serve (ripe avocado blended with plant milk), to serve
Salsa, to serve
Cilantro, to serve
Instructions
Preheat waffle maker.
Meanwhile, place beans in a bowl and mash until coarsely crushed.
Whisk egg, plant milk and vegan cheese together in a jug. Season with salt and pepper.
Scatter beans over base of waffle machine. Top with peppers. Pour over egg mixture.
Close lid and cook for 5 minutes or until set. Carefully remove waffle omelettes from waffle maker. Serve topped with sour cream, avocado and taco sauce and with lime and coriander.
