Zucchini Waffles with Cherry Tomato Salsa and Dill Yogurt

Can't remember where it came from... | Serves: 2 waffles | Time: ~40 min


Ingredients


Waffles

2 #zucchini, grated

1 tsp salt

1/4 cups milk

1/2 cup spelt flour (I used all purpose)

1 egg

1 tbsp chopped chives

1 tsp coconut oil


Yogurt

1 serving of greek yogurt

2 Tbsp dill

1 tsp salt


Salsa

7 oz halved cherry tomatoes

10 basil leaves chopped

Some chopped red onion

Salt & pepper

1 tsp red wine vinegar

1 tbsp EVO


Instructions

Grate zucchini and strain for 20 min with sea salt. Rinse and drain.


Combine with remaining waffle ingredients and cook.


Mix yogurt ingredients and salsa ingredients separately. Top each waffle with mixtures.

Peanut butter sandwich

Cup of coconut milk yogurt

Avocado/chickpea salad

Zucchini Waffle
