Zucchini Pesto

ANOTHER PESTO! Seriously, I might have a problem...



Recipe by Vegan Huggs | Makes: 3 servings| Time: ~15 min.


Ingredients

1/2 cup basil leaves, tightly packed

1/2 cup #zucchini, peeled & diced

1/4 cup pine nuts

1 tbsp lemon juice

1 tbsp nutritional yeast

1 cloves garlic

1/4 tsp salt , more to taste

Pepper, to taste

2 tbsp water

Pasta of choice (I did black bean spaghetti)

I said a leftover tomato, so I chopped them up and added that too


Instructions

Add all the ingredients (except the water) to a blender or food processor. Pulse for 10-20 times to combine and chop. Add the water as needed, and keep pulsing until you've reached desired consistency.
