Vegan Sausage Pancake Bake (GF, V)

Changes: lots of micro-changes, personal preference for mix, etc.


Ingredients

1 package Beyond Breakfast Sausage, chopped

Maple syrup for serving


Instructions

Preheat your oven to 375 degrees


Prepare your favorite pancake mix according to package directions. For the pancake mix, I replaced eggs with aquafaba and used coconut milk instead of real milk.


Spray a 12-inch cast iron with cooking spray or rub with plant-based butter. Pour in the pancake mix and sprinkle the chopped Beyond Breakfast Sausage Patty pieces over top.


Bake for 17-25 minutes or until cooked through. The recommended range was 17-20. I upped to 25 minutes, because that's just how long it took. I think GF mix with coconut milk changes up the timing.


Slice and serve with maple syrup.
