Thai Kale Salad

This is a kale heavy week with daily smoothies and time will tell if my body is thankful.

Thai Kale Salad

Source: One Green Planet | Serves: 2-3 | Time: 10 min

Changes: replace soy sauce with coconut aminos


4 cups #kale, chopped

4 medium #carrots, chopped

1 red onion, peeled and finely chopped

1/2 cup peanut butter (I generally use reduced fat Jif)

1/2 cup water

1 1/2 tbsp coconut aminos

1/2 lime, juiced or 1 tablespoon lime juice

2 garlic cloves, minced

1 tsp powdered ginger

1 tsp sriracha

3 tbsp chopped peanuts


Mix kale, carrots and onion in a large bowl. Separately, add peanut butter, water, coconut aminos, lime juice, garlic, ginger and hot sauce to food processor and blend until smooth. Pour over veggies and toss to combine. Divide into bowls. Sprinkle some nuts on there. Enjoy!
