Sun-dried Tomato, Chickpea, and Hummus Salad Sandwich

What I changed:


  • Made it a wrap instead of adding it all to spaghetti, could also work as a side salad

  • I added some broccoli, because I had it on hand

Ingredients

1 can #chickpeas, rinsed and drained

3 cloves garlic, diced

1/4 cup sun-dried tomatoes, packed in oil drained and roughly chopped

1 cup cherry #tomatoes, halved

1 cup #broccoli, roughly chopped

1 tsp oregano

S&P, to taste

1/2 cup roasted red bell pepper hummus, plus more to taste

Freshly chopped basil

Bread if served as a side


Instructions

In a large bowl, partially mash the chickpeas. Then add the rest of the ingredients and combine well. Top with fresh basil and serve on bread or as a side.

Exercise

Decent amount of walking. My fitbit is out of commission. No exact numbers until my Garmin replacement arrives.
