Peanut Coconut Ramen

Inspiration: Rabbit & Wolves | Serves: 1 brothy bowl | Time: 10 min



Changes: a lot, and I made it way easier. I love Rabbit & Wolves, but I was cooking just for me, and I didn't have a lot of time, so, here's a crazy simple recipe by me.


Ingredients

1 tsp Tubby Olive Persian Lime Infused Olive Oil

1 fat clove of garlic, minced

1 tsp ginger powder

1 tsp green Thai chili paste

3 cups broth

1/2 cup coconut milk

3 tbsp peanut butter

2 tsp coconut aminos

2 tsp lime juice

2 tsp agave syrup

1 serving Ocean Halo's Organic Ramen

1/2 cup #mushrooms, sliced

Peanuts, for garnish

Sriracha, to taste


Instructions

In a medium pot, heat olive oil over medium. Add garlic and sauté for 2 min. Add ginger powder through agave, and whisk well (make sure the peanut butter melts down). Bring to a boil. Add ramen and mushrooms. Remove from heat and let sit for 4 minutes. Ladle into a bowl. Sprinkle with peanuts and drizzle some sriracha. Enjoy!
