You know my quarantine approach to cooking: did you like it? Maybe mix up the ingredients and crack an egg on it. Works every time. Unless you're 100% vegan 100% of the time. Then, I'm sorry.
Serves: 2 | Time: 25 min
Splash of almond milk
1/2 tbsp EVO
2 pieces of naan or 4 mini ones like I used
1/4-1/2 cup shredded mozzarella
1/4-1/3 cup cherry #tomatoes, chopped
1/4-1/3 cup #BellPepper, finely chopped
1/4-1/3 cup red onion, chopped
2 tbsp fresh cilantro, chopped, to serve
Sriracha or Tabasco sauce, to serve
Preheat to 425F.
Combine your eggs and milk in a small bowl. Scramble them together. Heat a pan over medium heat. Add EVO. Then add your eggs. Cook through.
Put your naan on a baking sheet or pizza pan. Sprinkle with cheese. Then add the veggies. Then pile the eggs on top. Pop it in the oven for 8-10 minutes.
Remove from oven. Top with cilantro and hot sauce. Enjoy!
