Middle Eastern Egg Wrap


The hubby came up with this craziness this morning, and now I think I'll request it every week.


Not vegan, obviously, but certainly dairy free. Hummus really can make you forget all about cheese in the most unexpected ways! If you're able to have soy, a tofu egg could easily replace the real egg.


Makes: 1 wrap | Time: ~7 min


Ingredients

1 egg

2 tsp lime-infused EVO

1-2 tsp za'atar seasoning

Salt, to taste

1-2 tbsp chopped sun-dried #tomatoes

1-2 tbsp hummus

1 low-carb tortilla


Instructions

Cook one egg over easy in lime-infused EVO. Add za'atar and salt. Spread hummus on a wrap. Add the egg and tomatoes on top. Fold up the tortilla and enjoy!
