Mexican Jackfruit Pizza

Quarantine cooking at its best. The only fresh ingredients are white onion and red onion and onions keep for so long. Everything else is prepackaged. The result: indulgent deliciousness.


I referenced It Doesn't Taste Like Chicken for the jackfruit meat and all I changed there was the cooking oil. The general idea is my own, though I'm sure there are dozens of bloggers, who offer something similar. All the same, I feel really good about it.


Mexican Jackfruit Pizza

Makes: 2 small pizzas | Time: ~35 min


Ingredients


Pizza

2 Monteli's cauliflower gluten free pizza crusts (do not defrost)

Cooking spray

1 can vegan re-fried #beans

#Jackfruit taco meat (recipe below)

1/4-1/2 cup red onion, diced or sliced (depends on how much you like onion)

1/4-1/2 cup chopped roasted red pepper

~2 cups grated pepper jack cheese (adjust according to your love of cheese)


Jackfruit Taco Meat based off of It Doesn't Taste Like Chicken

2 20oz cans green jackfruit in water or brine , drained, rinsed, and chopped

1 tbsp chipotle infused EVO by the Tubby Olive

1 yellow onion, finely chopped (original recipe calls for sliced)

4 cloves garlic, minced

1/2 cup vegetable broth (homemade to reduce sodium)

1 tbsp agave

1/2 tbsp lime juice

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/4 tsp salt


Mexican Jackfruit Pizza

Instructions

Make the jackfruit meat. (I prepped this morning so that all I had to do was top the pizza and pop it in the oven tonight.)


Heat the oil in a large skillet over medium-high heat. When hot, add the onions and garlic and saute for about 5 minutes until the onions have softened and begin to brown.


Add the chopped jackfruit, broth, agave, lime juice and all the spices to the pot and cover. Reduce heat and let it simmer until the jackfruit softens slightly, and about 1/2 of the liquid is absorbed. About 5 minutes.


Now take a potato masher, and smash all the jackfruit up to get that shredded texture. If you find it a bit wet, just cook a little longer. If you find it a little dry, just add a splash more vegetable broth.


Now preheat the oven 350 F.


Unwrap your cauliflower crusts and spray them with a little bit of oil. . Divide all the ingredients in half. Spread each crust with re-fried beans. Top with the jackfruit meat and remaining ingredients.
