Leftovers Idea: Cuban Toast

Since I only made 4 plantains for yesterday's Cuban Plantain Boat recipe, I had quite a bit of refried beans and cauliflower rice leftover. So this morning, I decided, why not make Cuban toast?



Serves: 1 | Time: 10 min


Ingredients

1 piece of whole wheat bread

1 egg

1-2 tsp Tubby Olive Persian lime EVO

Jerk seasoning, to taste

1-2 tbsp vegan re-fried beans, heated

1-2 tbsp Spanish cauliflower rice, heated

2 tbsp cherry #tomatoes, chopped

1/2 tbsp fresh cilantro, chopped


Instructions

Throw your bread in the toaster.


Meanwhile, heat the EVO in a small frying pan over medium heat. Fry your egg with the desired amount of jerk seasoning.


Transfer toast to a small plate. Slather on the re-fried beans. Then add cauliflower rice and pat it down. Add your egg, and sprinkled with tomatoes and cilantro.
