Game Day Bean Dip (vegan options)

I went dairy-full for Game Day, because sometimes guests can be a$$holes. To make vegan, just use vegan substitutes to make life easy. My recommendations:


  • May favorite vegan sour cream is Forager, but for something like this, I'd use tofu based sour cream for this. It's a bit thicker.

  • Daiya is by far my favorite vegan cream cheese.

  • Daiya wins again with their Spicy Monterey Jack Shreds. It melts very well.


I buy these all at my local Giant. You should not have to go on a special trip to find them.


Ingredients

1 (16-ounce) can refried beans (I used vegan. Most stores have this now.)

1 cup sour cream

1/2 cup cream cheese, softened

2 tbsp taco seasoning

¼ cup salsa, store-bought or homemade

1 cup shredded Mexican cheese

Corn chips to serve


Instructions

Preheat the oven to 350°F.


In a medium bowl, mix beans, sour cream, and cream cheese until well combined. Add taco seasoning and salsa and stir to combine.


Pour into an 8×8-inch baking dish and top with shredded cheese. Bake for 25 minutes.


Serve hot.
