French Onion Beyond Meatballs

My friend's kids were doing a fundraiser and I thought I'd take a chance on a completely new magazine - Southern Cast Iron - and I am so glad I did. The magazine isn't exactly vegetarian friendly, but Beyond Meat really is a game changer. Since I didn't use frozen meatballs, this took a bit longer, but still worth it.


French Onion Beyond Meatballs

Source: Southern Cast Iron | Serves: 4-6 | Time: 1 hr


Changes: used vegan butter; used veggie broth; made Beyond Meatballs; used fresh spinach in the meatballs; used breadcrumbs instead of crackers in the meatballs


Ingredients

2 tbsp vegan butter

2 tbsp EVO

4 cups sliced onions

3 cloves garlic, minced

1 tbsp all purpose flour

2 cups veggie broth (homemade to reduce sodium)

2 tsp fresh thyme

1/4 tsp each S&P

Beyond Meatballs (recipe below)

1 cup shredded gruyere cheese

Mashed potatoes, to serve

Fresh thyme, for garnish


1 lb Beyond Beef ground, thawed

1 cup packed #spinach, finely chopped

2/3 cup onion, diced small

1/4 cup breadcrumbs

3 cloves garlic, minced

1/2 tsp black pepper


French Onion Beyond Meatballs

Instructions

Melt vegan butter in a 12 inch cast iron skillet over medium-low heat. Add onion and garlic. Cook, stirring occasionally, for 25 min.


At the same time, work on your meatballs. Preheat oven to 400°. Lightly grease a 9 x 13 baking pan and set aside. In a medium mixing bowl, combine meatball ingredients, using your hands to mix well. Roll into 20 golf-ball sized meatballs and line baking pan. Bake for 20 minutes. Set aside. When the baking time is up, switch oven to broil.


Back to the skillet. Stir in flour and cook, stirring occasionally for 5 minutes. Stir in broth, thyme, salt, and pepper. Bring to a boil. Reduce heat and simmer for 10 min.


Add meatballs. Cover, and cook another 5 minutes. Remove from heat, and sprinkle with cheese.


Put skillet in the broiler and cook until the cheese is melted and browned, about 3-5 min. Serve with mashed potatoes.
