Had some leftover zucchini, a little bit of Fiore fig & balsamic vinegar, and a whole lot of sumac from Amman. This is the amazing result!
Serves: 2 | Time: ~15 min
1/2 tbsp EVO
1/2 a yellow onion, chopped or cut into strips
1 large #zucchini, chopped into 1 inch cubes
1 tbsp lemon juice
2 tbsp fig & balsamic vinegar
2 tsp sumac
Add EVO to a large pan over medium heat. Add the onion and saute for about 4 min.
Add zucchini and mix well with the onion. Saute another 3 min or so.
Add the lemon juice and vinegar and stir well. Then add the sumac and stir well. Sautee another 3 min or so.
I wrote "or so" a lot here because I was cooking other things at the same time and didn't keep exact track of time. Also, it depends on how crunchy or soft you like your sauteed zucchini. I like mine a little undercooked to keep the crunchiness.
