Fake-con Pepper Pancakes with Sweet Potato Cheese Sauce (GF, V)

Ingredients

1/3 cup cooked fake-con julienned

¼ cup chopped bell pepper, sauteed with fake-con

2 tbsp thinly sliced scallions, sauteed with fake-con

1 cup all-purpose GF flour

¼ tsp salt

2 tsp sugar

2 tsp baking powder

1 Bob's Red Mill egg replacer

1 cup plant-based milk (I usually use coconut milk for anything sweet)

3 tbsp melted vegan butter


Instructions

Stir together the flour, salt, sugar and baking powder.


Add plant-based milk and egg replacer, and stir just until blended.


Fold in the melted vegan butter.


Add the fake-con to the batter. Stir lightly to combine.


Cook the pancakes.


Serve with the sweet potato cheese and enjoy!
