Cream of Zucchini Soup

We polluted our bodies with junk food and beer yesterday, so tonight we start a cleanse for the week. Zucchini soup is very low in calorie and of course has a lot of veggie servings. The next 4 days will be veggie packed bowls. Let's do this.



Slightly Modified a Skinny Taste Recipe | Serves: 3 big portions | Time: ~30 min


Ingredients

1/2 small onion, quartered

2 cloves garlic

3 medium #zucchini, skin on cut in large chunks

4 cups vegetable broth (we always do home made to reduce sodium)

3/4 cups cashew sour cream

S&P, to taste

Some red pepper flakes to serve


Instructions

Combine broth, onion, garlic and zucchini in a large pot over medium heat and bring to a boil.


Lower heat, cover, and simmer until tender, about 20 minutes.


Remove from heat and purée in a blender, add the cashew sour cream and purée again until smooth.


Taste for salt and pepper and adjust to taste. Serve hot.

3 cups of tea (slowly getting my voice back)

96 oz of water

Baked avocado with egg whites

2 buckwheat waffles with blueberry agave syrup

2 glasses of rose

Celery with peanut butter

Zucchini soup

Vodka soda


Exercise

I totally forgot my squats yesterday, so I punished myself today with 150 squats.
