Avocado Hummus & Strawberry (or Mango!) Toast

Ingredients

1 (15 oz) can #chickpeas, well drained

2 medium ripe #avocados , cored and peeled

3 tbsp EVO

1 1/2 tbsp tahini

3 tbsp lime juice

1 clove garlic , peeled

8 pieces of bread, toasted

Enough #strawberries, sliced up, to cover the toast (2 pints should be enough for 8 pieces)

Fresh mint, chopped


Instructions

Make the hummus by blending chickpeas, #avocado, EVO, tahini, lime juice and garlic. Slather the hummus on the toast. Top with strawberry slices and fresh mint. Enjoy!


Note

My husband and I are not capable, nor should we be, of eating 8 pieces of toast for breakfast, so we had a lot of hummus left over. This morning, we diced up a mango we had on hand, and topped our toast with that instead of strawberries (which we used up yesterday). The mint still worked really well.
