Veggie Quinoa Sushi Bowl

Inspired by Lazy Cat Kitchen (I'm definitely lazier than the cat on this one)| Serves: 1 bowl | Time: ~30 min


Ingredients

1 cup cooked #quinoa, chilled

1/2 small avocado, peeled & sliced

1 carrot, peeled & diced

1 beet, peeled & diced

Coconut aminos

Wasabi

Pickled ginger

1 nori sheet


Wasabi is good for than just clearing your sinuses. According to Organic Facts, it can also reduce your cholesterol levels and prevent strokes. Just don't overdo it. Wasabi can also damage your liver in large amounts.

Instructions

Cook quinoa according to package instructions. Let cool. You can make the quinoa the night before and refrigerate, which is what I did.


While quinoa is cooking and cooling, prep


Once quinoa has chilled, add it to a bowl. Add remaining avocado, carrot, and beet. Sprinkle bowl with coconut aminos. Serve with wasabi, ginger, and nori sheet on the side.

80 oz of water

Glass of chocolate almond milk

Cold green peanut soup

1 piece of swiss cheese

Kashi with almond milk

Eggplant sandwich with chips from Cafe Kindred
