Vegan Braunschweiger Sandwich

It's really weird what I miss as a meat eater sometimes. Today, I really missed a good Braunschweiger sandwich, so here's what I came up with.


Ingredients

1 cup #walnuts

1/2 cup kidney #beans

1.5 tbsp coconut aminos

1.5 tsp liquid smoke

1 Neat Egg (my go-to egg replacer)

1/2 tsp salt

1 tsp cumin

1 tsp chili powder

1 tsp smoked paprika

1/2 tsp pepper


Instructions

Put your walnuts into a food processor. Blend until the walnuts are very finely chopped (almost a powder). Add in your beans, aminos, liquid smoke, and spices. Blend until the mixture is smooth and evenly spiced. Add neat egg and blend until fully incorporated.


I had some right away, but if you like cold Braunschweiger, go ahead and refrigerate it first. I went with wheat toast and mustard to complete the sandwich. If I had any lettuce, tomato, or vegan cheese, I would have gone for that as well.
