Stuffed Breakfast Shells with Marinara Sauce

This one was imagined and executed by the hubs, so measurements aren't exact, but you get the gist. It was delicious, and we're already planning to try it again with scrambled eggs or egg whites and a pesto sauce.



Serves: 4 shells | Time: 30 min


Ingredients

4 medium pasta shells

4 eggs

4 cups spinach

1/2 tbsp Tubby Olive garlic infused EVO

Salt, to taste

1-2 cups marinara sauce


Instructions

Lots of moving parts, so cook in whatever order makes you comfortable, but here's what he did.


Start bringing your water to a boil. Eventually cook according to box instructions.


Meanwhile, poach your eggs. We use an egg poacher.


Also meanwhile, sauté your spinach in the olive oil with a little salt until wilted. Add your prepared marinara sauce until it's warmed through.


Now combine. Put egg egg into a shell. Cover with the marinara sauce and sautéed spinach. We ate with a side of garlic bread AKA more carbs, but you do you.
