Strawberry Salsa and Hummus Toast

Today was my first day to the Farmers Market without a mask and with the choice to actually pick my produce, not just order it. Why not celebrate with some fresh strawberries?


Strawberry Salsa and Hummus Toast

Changes: Put the salsa on top of hummus toast; used lime infused EVO


Ingredients

4-5 pieces of bread, toasted

Hummus to taste (I used about 1 tbsp of hummus per piece of toast)

1 pint ripe #strawberries, hulled and chopped

1 jalapeño pepper, finely chopped

1/4 cup minced red onion

1 tbsp lime juice

1-2 tsp Tubby Olive Persian lime infused EVO

1/4 cup fresh chopped cilantro (plus extra to taste)

S&P, to taste


Instructions

Combine strawberries through S&P in a bowl. Slather hummus on toast and top with the salsa. Ta-da!
