Smoky Eggplant Chips

One of my clients has been getting pretty stressed and in turn stress eating not so healthy snacks to cope. So, I decided to make some healthier snacks to keep everyone going without doing too much damage to their bodies. The good news is that these are delicious. The bad news is, they got eaten before they made it to the office.... There's always next time!



Recipe by Heartful Pursuit | Makes: 2 servings | Time: 1 hr.


Ingredients

2 small #eggplant, sliced thin

Avocado oil spray

½ tbsp smoked paprika

½ tbsp garlic powder

1 tsp oregano

½ tsp thyme

½ tsp turmeric

½ tsp black pepper

½ tsp onion powder

¼ tsp sage

¼ tsp salt

Pinch cayenne pepper


Instructions

Preheat oven to 250F and set aside 2 large cookie sheets.


Slice the eggplant using a mandolin slicer or a sharp knife. The slices should be as thin as a potato chip.


Place completed slices on cookie sheets. Once all slices are on the sheets, spray with coconut oil or avocado oil spray on one side. Then, sprinkle each slice with seasoning.


Once complete, flip over each eggplant slice and repeat with a spray and season.


Place in the oven to bake for 50-60 minutes.
