Ingredients1 small yellow onion, diced2 carrots, diced2 celery stalks, diced3 garlic cloves, mincedSalt & pepper8 oz dried green lentils, rinsed and picked through1 28-ounce cans crushed tomatoes2.5 cups vegetable broth1 bay leaf1 tbsp dried basil1 tsp dried parsley1/2 tsp crushed red pepper flakes
InstructionsMix together all the ingredients. Slow cook for 5 hours.Ladle over noodles of choice. We did zoodles.
