Slow Cooked Cabbage and Beyond Sausage Soup

Home all damn day in these days of quarantine, so might as well throw your dinner together mid-day and get back to watching all seasons of The Office for the 20th time since March.

Changes: used veggie broth instead of chicken broth; used Beyond Meat sausage; used almond milk instead of skim milk.


Ingredients

4 cups veggie broth (homemade to reduce sodium)

1 medium head #cabbage, chopped

2 medium onions, chopped

1/2 lb fully cooked Beyond Meat sausage, sliced up

1/4 tsp black pepper

1/2 cup all purpose flour

1 cup plant-based milk


Ingredients

Combine broth, cabbage, onions, and sausage in an Instant Pot. Cover and use the slow cooker function to cook on high for 5-6 hours.


Turn Instant Pot to soup mode. Stir in pepper. Gradually stir in flour and milk. Cook for about 15 minutes or until the soup has thickened.


Serve (maybe sprinkle with some salt like I did) and enjoy!
