Shaved Brussels Sprouts & Apple Salad

Another meal to make sure those perishables don't perish. Today, I wanted to make sure we put our Brussels Sprouts and very old apples to use.


What I changed:

  • Halved the recipe and ate as a main

  • Added a small handful of kale, why not?

  • Used garlic infused EVO and skipped the garlic clove

  • Replaced maple syrup with agave

  • Used a gala apple instead of the honey crisp #apples suggested

  • Used nutritional yeast instead of Parmesan cheese

Ingredients


Dressing

2 tbsp garlic infused EVO

1/2 tbsp lemon juice

1 tbsp apple cider vinegar

1/2 tbsp agave syrup

1 tsp Dijon mustard


Salad

1/2 lb #BrusselsSprouts ends trimmed and leaves shredded

Handful of #kale, chopped

1 green apple, chopped

1/4 cup dried #cranberries

1/4 cup sunflower seeds

2 tbsp nutritional yeast

S&P, to taste


Instructions

Put all the dressing ingredients in a small jar. Shake well. Set aside. Add all the salad ingredients in a medium-large bowl. Add the dressing. Toss well. Enjoy!
