Roasted Brussels Sprout and Grape Flatbread (DF, GF)

My store is STILL out of my go-to gluten free, vegan crusts, so this one is not vegan. You can always make a vegan crust from scratch. I'm in a quick and easy mood these days, so I'm stuck with crusts that have eggs. What can you do?


Makes: 2 flatbreads | Time: 40 min


Roasted Brussels Sprout and Grape Flatbread (GF)

Changes: used a frozen crust instead of making a galette crust; replaced red onion with a half bunch of green onions; made a walnut paste; skipped parm; replaced onion powder with garlic powder


Ingredients


Cheesy Walnut Paste

1 ¼ cup #walnuts

2 tbsp nutritional yeast

½ tsp garlic powder

½ tsp salt

¾ cup hot water plus an optional extra tbsp or two for desired consistency


Toppings

1 tbsp olive oil

1/2 bunch green onion, thinly sliced

10 oz #BrusselsSprouts, trimmed and quartered

⅓ cup + 1 tbsp balsamic vinegar (I used Seasons cinnamon & pear dark balsamic)

1 cup red #grapes halved

S&P, to taste


The Rest

2 Udi's gluten free pizza crusts, defrosted (cook longer if you don't have time to defrost)

Spray cooking oil


Instructions


Get the paste and topping done ahead of time.


The Walnut Paste

Using a kettle or small pot, boil a cup or two of fresh water. (Since some will evaporate.)


Add all the ingredients using only ¾ cup of the hot water to your blender and process until smooth and creamy. It will take about a minute or so for the walnuts to fully break down and become smooth. If needed, turn off your blender and start again until desired texture is reached. Taste for seasoning and adjust if necessary. If you like a thinner sauce, add an additional 1-2 tablespoons of water and re-blend.


Set aside.


The Toppings

Heat olive oil in a large skillet over medium heat. Add green onions and sprouts cook until just beginning to brown, 7–8 minutes. Stir constantly.


Remove from heat and stir in 1 tablespoon of balsamic vinegar, grapes, salt, and pepper. Cool vegetable mixture.


The Flatbread

When you're ready to make the flatbreads, preheat your oven to 375F.


While you wait, spray each crust with cooking spray. Then slather on the walnut paste. Then pile on the toppings.


Put the flatbreads in the oven and cook for 5-7 minutes.


Remove from oven. Slice it up. Enjoy!
