Leftovers Idea: Mushroom Pesto Toast

It's pretty much a rule in our house now: if you have leftovers, crack an egg on them for breakfast.



Serves: 2 | Time: 10 min


Ingredients

2 pieces of whole wheat bread

Leftover mushroom pesto

2 eggs

Tubby Olive Mushroom/Sage infused EVO, for cooking

Penzey's breakfast sausage seasoning, to taste

S&P, to taste


Instructions

Toast the bread. Spread mushroom pesto on top. Fry eggs in oil and season. Pop the eggs on top of each piece of toast. Enjoy!
