Leftovers Idea: Coconut, Apple and Ginger Dal Toast

Should I write a "leftovers" cookbook and call it, Throw an Egg on It! ?


Leftover dal, warmed up in the microwave

Bread, toasted

Egg whites, scrambled and seasoned with garam masala

Fresh cilantro, for garnish

Unsweetened coconut flakes, for garnish


Spread the warmed up dal on your toast. Then pile on the scrambled egg whites. Sprinkle fresh cilantro and coconut flakes on top. Enjoy!
