Leftovers Idea: Breakfast Peanut Butter Curry

It's funny how some things taste better the longer they sit. I wasn't crazy about my peanut butter curry for dinner last night, but I'm in love with making it the base of this morning's breakfast.

Serves: 2 | Time: < 10 min


Leftover peanut butter curry lentils

Tubby Olive's garlic infused olive oil, for frying

2-4 eggs

Salt, to taste

~2 tsp Penzey's Turkish seasoning

1 avocado, sliced


Heat up your leftovers.

Fry your eggs in the garlic infused olive oil and sprinkle with seasonings. If you're hungry make 4, if less so, make 2.

Divvy the lentils into two bowls. Top with eggs and avocado slices.
