I've been on a ridiculously lazy kick, and I have a feeling it's going to continue throughout the week. So giddy up for some quick and easy with a whole lot of shortcuts.
Inspired by a Life Made Simple Bakes Recipe | Serves: 1 | Time: ~20 min
Ingredients
2 oz brown rice noodles
1 small package frozen stir-fry vegetables
1 tbsp vegetable or canola oil
½ tsp sesame oil
1.5 tbsp coconut aminos
½ tsp rice vinegar
Squirt of sriracha
1 tbsp peanut butter
½ tbsp agave
1 clove garlic, minced
1 green onion, minced
Instructions
Cook noodles and veggies according to packages. While those are cooking, whisk the remaining ingredients into a smooth sauce. Once noodles and veggies are done, combine them into a bowl. Pour the sauce over and enjoy your laziness.
