Jamaican Mango Stew (updated with "quarantine" tips)


Jamaican Mango Stew

Modified a Holy Cow Recipe | Serves: 8 | Time: ~45 min


Ingredients

2 ripe #mangoes, pitted and diced

1 medium red onion, finely diced

3 cloves garlic, minced

1 tsp vegetable oil

1 medium green bell pepper, seeded and diced

1 jalapeno

1 tsp nutmeg

1 tsp curry powder

1/2 tsp black pepper

1/2 tsp paprika

1 tbsp coconut aminos

1 tbsp chopped thyme (if using dry, use 1 tsp)

1/2 tsp turmeric

2 tbsp coriander leaves, finely chopped, optional

Salt to taste

3 medium potatoes (use red or yellow), boiled and diced

1 13.5 ounce can #CoconutMilk

1/4 cup #mango puree (you can either use canned or just puree fresh mangoes)


Serve with some rice. I did basmati.


Instructions

Boil the potatoes (~15 min).


In a large saucepan over medium heat, add oil and saute the onions and garlic until they begin to soften, about 3-4 minutes.


Add the green pepper, jalapeno, turmeric, thyme, curry powder, black pepper, paprika, coconut aminos and salt and stir well to mix. 


Add the cooked potatoes and half the coconut milk. Stir well to mix and bring to a boil. Lower heat to a simmer, cover, and let the stew cook for five minutes so the flavors merge.


Add mangoes, mango puree and the remaining coconut milk and heat until warmed through, but turn off the heat before the stew comes to a boil. Check salt and add more if needed.


Garnish with coriander leaves, if using, and serve hot with rice.

Quarantine Notes

It's all about making do with what you have, and really about relying on more canned goods and frozen foods than I usually do.


Tonight, I did not have any bell pepper or jalapeno on hand, so I tried something a little different. I blended the mango slices I wanted to puree with half of the coconut milk and a chipotle pepper in adobo sauce hoping to make up for the kick the jalapeno usually brings. Result:


Additionally, instead of regular rice, I served the stew with cauliflower rice seasoned with Singapore seasoning and lime infused EVO. It's too easy to over-rely on grains when you're stuck in the house. Cauliflower lasts a bit longer than a lot of other produce, but it's going on 5 days, so I figured it was a good time to incorporate it and save ourselves the extra carbs this evening. There's already a potato in the stew, and lord knows the next week will be carbo LOADED.
