Grilled Peach Sandwich with Basil & Thai Peanut Sauce

It doesn't get much quicker or easier. I think next time, I'll add some sriracha for a spicier kick.



Slightly Modified a Recipe by Connoisseurus Veg | Makes: 2 sandwiches | Time: ~15 min.


Ingredients

For the Thai Peanut Sauce

4 tbsp creamy natural peanut butter

2 tbsp agave

1 tbsp coconut aminos

1 tbsp lime juice

For the Grilled Peach Sandwich

4 slices good sandwich bread

2 small #peaches sliced thin

4 tbsp fresh basil leaves

2 tsp EVO


Instructions

Whisk peanut sauce ingredients together in small bowl. Thin with a bit of water if desired, keeping in mind that it will soften up when grilled.


Slather bread slices with peanut sauce, then stuff with peach slices and basil leaves.


Coat a medium flat-bottomed skillet with oil and place over medium heat. Place sandwich into skillet and cook until browned on bottom, about 3-4 minutes. Flip and cook until browned on opposite side, 3-4 minutes.


Serve.
