Eating Well Recipe | Serves: 6 | Time: ~30 min
2/3 cup mayo
1/2 cup chopped red #bellpepper
1/2 cup nonfat plain Greek yoghurt
1/4 cup crumbled feta
2 tbsp fresh parsley
2 tbsp fresh dill, divided
1 tsp lemon juice
6 chopped kalamata #olives
8 cups #broccoli florets
1/2 cup panko
2 tsp EVO
Preheat oven to 375 F.
In a large bowl, combine mayo, red bell pepper, 1/2 cup nonfat plain Greek yoghurt, crumbled feta, fresh parsley, 1 tbsp fresh dill, lemon juice and olives.
Add the broccoli and stir to coat.
Spoon into a greased baking dish.
Mix panko, EVO and 1 tbsp dill in a small bowl, and then sprinkle over the broccoli mixture.
Bake 20 minutes.
