Gochujang Pesto Noodles

I really, really love pestos. They're so very easy to make, and there are so many varieties. Out of all the pestos I've made, this one definitely packs the most heat. I'm glad I paired with sweet potato glass noodles, but I could see pairing it with traditional pastas. Arrabiata sauce is spicy, so why not?


Gochujang Pesto Noodles

Changes: doubled the amount of gochujang.


Ingredients

2 cups basil

1/3 cup pine nuts

1 clove garlic

1 tsp salt

1 tsp sesame seeds

1/4 cup sesame oil

1/4 cup olive oil

4 tbsp gochujang sauce


Instructions

Blend everything together in a Vitamix or Ninja Bullet. Serve over whatever you want. Tonight I served with sweet potato glass noodles, steamed broccoli, and sautéed bell peppers and red onion.
