Eggplant Piri Piri

Are you ready for some spice???


Recipe from a friend | Serves: 4 as a side, I ate the whole dang thing, if you throw it over some rice, probably serves 2 healthy dinners| Time: ~25 min.


Ingredients


Eggplant

1 large #eggplant, diced into 1/2 inch pieces

1 yellow #bellpepper

EVO

S&P


Sauce

1 tbsp EVO

1 medium onion, finely chopped

3 cloves of garlic, minced

2 tsp ginger

1 tbsp hot pepper flakes

2 tbsp tomato paste

2 tbsp reduced sugar ketchup

1 tbsp paprika

1 tsp salt

3 tbsp apple cider vinegar

1 tbsp vegan Worcestershire sauce

Basil, for serving


Ingredients

Preheat the oven to 425F. Lightly oil a baking pan. Arrange the eggplant and bell pepper in a single layer on the pan. Drizzle lightly with EVO and sprinkle with S&P. Roasted until tender, 20 min, turn once.


While the eggplant roasts, heat oil in a saucepan over heat. Add onion, garlic, and ginger and cook 5 min. Stir in pepper flakes, tomato paste, and ketchup and cook another 2 min. Transfer mixture to a blender and add paprika, salt, and Worcestershire sauce. Process until smooth.


To serve, toss the eggplant with the sauce and sprinkle with basil.

1 bowl of cinnamon toast crunch with cashew milk

Eggplant piri piri

1 beer because that piri piri is SPICY
