Curry-Roasted Fennel Salad with Rosemary Tahini Dressing

So this isn't bowl, since I put it on a plate, but I like to put all my salads in the bowl section. Deal with it. What's great about salads is pleasing meat eaters. My husband through a couple strips of pork on top, and was just as happy eating the salad as I was.


Also, tip for self-checkout: fennel is actually under "anise" at Harris Teeter.

Slightly modified a Minimalist Baker recipe | Serves: 2 as an entree | Time: ~30 min.


Ingredients


Fennel

1 bulb #fennel - fronds and stems removed, thinly sliced with a knife or mandolin

1 tbsp curry powder

1 tbsp avocado or melted coconut oil

Pinch of salt


Salad

5 cups salad greens

1 red #bellpepper, thinly sliced

1 batch roasted #chickpeas (I used a previous recipe)


Dressing

1/4 cup tahini

1 1/2 tbsp lemon juice

1 1/2 tsp apple cider vinegar

1 tsp thyme

2-3 cloves garlic, minced

1 1/2 tbsp coconut aminos

5-8 tbsp water to thin

Pinch of salt


Why bring fennel into your diet? According to Medical News Today, fennel contributes to building and maintaining bone structure and strength, supports heart health, boosts your immunity, reduces chronic inflammation, and help with weight management.

Instructions

Preheat oven to 375 degrees F and arrange fennel on a large baking sheet. Sprinkle with curry powder, oil, and sea salt and toss to combine. Spread in an even layer.


Roast fennel for about 20 minutes or until tender, golden brown, and slightly crispy on the edges.


In the meantime or ahead of time, mix your dressing. Add water according to how thin you want your dressing to be. I only used 5 tbsp to give it a caesar dressing consistency. Taste and adjust flavor as needed.


To serve, arrange greens of choice on a platter or serving bowl and top with red bell pepper, roasted fennel, chickpeas. Serve with dressing on the side.

Exercise

Going crazy from being immobile. Managed about 20 minutes of some strength training from the floor.
