I'm getting pretty sick of salads these days, so I thought, why not cook with lettuce? The internet had a recipe. I tried it. It's definitely more boring than a big salad, but it feels more detoxifying. And can't we all use some detox?

Changes: replace sunflower oil with vegetable oil
1 tbsp vegetable oil
½ cup #cashews
2 green onions, washed and thinly sliced
¼ tsp black pepper
1 head butterhead #lettuce, washed
½ tsp ground coriander
2 tbsp nutritional yeast
½ tsp sea salt
3 cups vegetable broth (homemade to reduce sodium)
Heat up the oil in a big pot and fry the onion together with the cashew nuts for about 10 minutes. Add everything to a blender (vegetable broth has to be cold) and blend everything well. Pour back the soup to the pot and heat it up, but don't boil it. Divvy into bowls and enjoy! I added some crushed red pepper, but you know, you do you.
