I was expecting this to be weird especially with the changes I made, but it ended up being a super delcious quick and easy meal. I think using sausage (beyond or not) is so much tastier than ground beef. But maybe that's just me.

Changes: made some adjustements to the process to speed up things; replaced avocado oil with EVO; used onion powder instead of chopped onion; used Beyond Italian Sausage instead of ground beef; and used SO Delicious Coconut Yogurt instead of Greek Yogurt.
1 pound brussel sprouts peeled and trimmed chopped
1 tbsp minced garlic
2 tbsp EVO
1 tsp salt
1 tsp thyme
1/4 tsp dill
Combine the first three ingredients in a large sauté pan over medium heat.
Sauté for 12 minutes.
Add seasoning and sausage. Saute another 7-9 minutes.
Remove from heat and stir in coconut yogurt.
Divvy into bowls and enjoy!
